Mission Mixed Grille
Pork Tenderloin and Duck Breast
Select pork tenderloin medallions grilled to medium, finished with a wild forest mushroom red wine cream sauce. Maple Leaf Farms duck breast grilled to medium, with four berry-port wine reduction. Complemented by a confit of roasted potatoes and winter vegetables.

Stuffed Filet Mignon
Ten ounce Certified Angus Beef tenderloin stuffed with fresh spinach, roasted garlic, sun-dried tomatoes and Maytag blue cheese, wrapped with apple wood smoked bacon, char grilled, with bordelaise reduction. Baked potato stuffed with crème fraiche, chives, bacon and black diamond cheddar and macedoine of vegetables.

Pistachio and Montrachet Crusted Rack of Lamb
Tender young rack of New Zealand lamb, oven-roasted to medium, presented with a side of rosemary-Dijon mint glaze. Lyonnaise potatoes and a timbale of Parmesan cream spinach.

Terra Aqua
Certified Angus Beef Filet Mignon & Japanese Scallop Cake
Eight ounce Filet Mignon grilled with a Jack Daniels demi-glace. Japanese scallop cake with cilantro aioli. Garlic and Parmesan mashed potatoes androasted butternut squash
with cinnamon, nutmeg and pecan butter.

Fruits de Mer Grille and Saute
Filet of grilled grouper with jumbo scallops and cold water shrimp in a light Boursin cheese and roasted red pepper seafood broth. Accompanied by saffron truffle risotto and jardinière vegetables.
